Dr. Courtney Daniels serves as an Adjunct Faculty member at the University of the Cumberlands and Brescia University. She also serves as a Content Specialist for JCP Eats, a Kentucky-based food and recipe blog. She has several years of experience in restaurant management for major brands, including Olive Garden and Bob Evans. Dr. Daniels received her DBA with a concentration in Marketing from the University of the Cumberlands in 2025. Her dissertation research focused on social media engagement and brand loyalty within the North Carolina food service industry. Dr. Daniels currently resides in Hickory, NC, with her two dogs. In her spare time, she enjoys cooking, reading, and hiking.
