Cumberlands is the only university in Kentucky to receive this approval
Nutrition courses at University of the Cumberlands recently received approval from the Association of Nutrition and Foodservice Professionals (ANFP). Cumberlands is the only university in Kentucky to receive this approval.
The University now offers a program for students to become a Certified Dietary Manager, Certified Food Protection Professional (CDM, CFPP) by completing just two courses: Applied Nutrition for the Dietary Manager and Food Service Management. Following the completion of these classes, students are prepared to apply for the nationally-recognized CDM, CFPP Credentialing Exam CDM, CFPP Credentialing Exam. CDM, CFPP-credentialed individuals work in facilities such as long-term care facilities, correctional facilities, schools, or senior living facilities.
A CDM, CFPP has achieved competency in the five key areas of nutrition, food service, personnel and communications, sanitation and safety, and business operations. According to the US Bureau of Labor Statistics, a CDM, CFPP stands to make an average of $65,310 per year, with the career field expected to grow 6 percent by 2034, faster than the overall average of other jobs..

Strong foodservice management is critical to patient care, resident satisfaction, and operational efficiency. CDM, CFPPs are recognized as the expert in all areas of foodservice management, including leading a foodservice operation team, ensuring sanitation and food safety, purchasing and inventory control, business operations, documentation of nutrition information and applying medical nutrition therapy principles.
The CDM, CFPP is listed as the primary qualification in the CMS regulations for the Director of Food and Nutrition Services in the absence of a full-time Registered Dietitian Nutritionist in healthcare settings.
